With baked eggplant

Ingredients
1 kg eggplants
2 eggs
Flour
breadcrumbs
2-3 tomatoes
sunflower oil for frying
salt
Method
Eggplant cut into slices and add salt. Allow to drain for about 20-30 minutes, rinsed and browning slightly. Then PANIC with eggs, flour and breadcrumbs and fry again, drain on paper. Put them in a baking dish, with each piece put circle tomato and sprinkle with grated cheese. Bake 5-10 minutes.
