Breaded chicken cutlets in Vienna

Ingredients
1 chicken about 1 kg
1 bunch roots soup
salt
pepper
flour
breadcrumbs
1 egg
3-4 tbsp milk
cheese
grated lemon peel
lemon juice
20 g butter
ivory potion or salted water
fat frying
Method
Cleaned chicken cooked in Costa potion or salted water (enough to cover it) with coarsely chopped roots for soup. Remove, clean of skin and bones, cut into portions and sprinkle with salt, pepper and a few drops of lemon juice. Prepare a thick pancake dough from the egg, milk and a pinch of salt. Dip cutlets in the dough, then press well in bread crumbs and fry one at a time until golden color in hot fat. On each chop immediately after frying it put a piece of butter, grated lemon peel and grated cheese.
