Caramel pears

800 g - 1 kg pears
1 and 1/2 cup cream
3/4 cup milk
200 g sugar
3 eggs
1 and 3/4 cup flour
100 g butter
the juice and rind of 1 lemon
a few drops of rum or cognac

Peel and clean the pears. Cut them into large cubes. Pour over the mixture of alcohol and lemon juice. Confusion and set aside. Mix 1 1/2 cups flour with lemon rind. To it add sliced ​​cold butter. With fingers do the crumbs. Break 1 egg and knead a soft dough. Wrap in foil, put in refrigerator to set. Heat the cream and milk to boiling. Caramelized sugar and add to it a few times hot milk and cream. Pour the chopped pears and bring to a boil. Beat 2 eggs with 2 tbsp flour, pour in pears. Reduce heat and stir until mixture begins to thicken. Remove from the heat and put in a fireproof container. Bake in the oven at 180C for about 30 minutes. Remove and grilled pears on grate cooled shortbread. Return to oven for another 15 minutes, bake until golden. Allow the pears to cool completely before serving. Optional sprinkle with powdered sugar.
