Eggs baked in muffin shapes (M * oeufins)

3 onions
1 tbsp butter
24 slices of ham
12 cubes frozen spinach or 24 tbsp spinach a la cream
12 eggs type S - below 50 g
freshly ground black pepper
1 ball mozzarella or 100 g other cheese
Optional - parsley, dill, 3 scallions
Optional - 400 g spinach, 50 g pure butter, 300 g of sour cream, cottage cheese

Heat oven to 160C. Peel and chop the onion half washers. Heat the butter in a pan and fry the onion until lightly browned and caramelized for about 10 minutes. greased tray type shape muffin - 12 and spread on two slices of ham in the form of overlapping, leaving no side hanging much of the ham. Spread in so received baskets onions and spinach. Break one egg in any form and season with salt and pepper. Put a piece of mozzarella cheese and bake or m * oefins in preheated 180 C oven for about 20 minutes. Serve m * oefins bread. For spinach a la cream: Wash spinach repeatedly and remove any leaves that are yellowed. Cut the spinach finely with a knife or blend. Put the spinach in a Teflon pan with the butter and season with salt and pepper. Cook over low heat, stirring occasionally for about 15 minutes or until the water evaporates. Put then the cream and cook another 5 minutes. Season to taste with salt and pepper. * instead of 300 ml cream, I only put 2 tbsp sour cream and 250 g cottage cheese, parsley, dill and chopped onions. Falsified with 1 tsp dried garlic. * use separate shapes metal and silicone muffin tray with shapes instead of muffins. * 6 muffins baked and half before I put the eggs and cheese, put in the freezer. Peko later I put only eggs and cheese, for 35-40 minutes. * Instead of mozzarella cheese put Gouda. * For 12 muffins.
