Ingredients
500 g pork tenderloin
150 g rice
1 eggplant
1 zucchini
1 pepper
4 tomatoes
1 tbsp olive oil
salt, red pepper, black pepper
Method
Meat eggplant, zucchini, pepper and cut into pieces. Tomatoes are peeled, cleaned of seeds and cut into quarters. Chopped meat fry in olive oil, stirring with a wooden spoon. Add salt, sprinkle with pepper and paprika and add the rice. Once the beans begin to become transparent, add chopped vegetables. Cover and leave to simmer for 5 minutes. Make up to 500 ml water and dish boil sandwiching until rice absorbs all the liquid.
