Salad with fried eggplant and roasted peppers

Ingredients
100 g feta cheese
2 eggplants
7 peppers
1/2 bunch parsley
5 cloves garlic
2 tsp vinegar
50 ml sunflower oil
salt
Method
Eggplant Wash and cut into thin strips lengthwise. Add salt and leave to drain, then fry. As cool to tear strips lengthwise. The peppers are roasted, peeled, cleaned of seeds and tear in length. Mix the eggplants and peppers and add the chopped parsley, crushed garlic, vinegar, the oil and salt to taste. Mix well and sprinkle with plenty of grated feta cheese.
