Ingredients
vegetables of your choice - zucchini, carrots, peppers and other
small mushrooms
# breading:
1 egg
1 cup white wine
1/2 cup flour
1/3 cup wheat starch
salt
turmeric

Method
Vegetables are diced and blanched in salted water for a few minutes. Immediately after removing watered with cold water. Leave to drain. Mushrooms sauté or cook a little. Stir in egg yolk custard with wine, flour, starch and spices. Allow to stand for 10 minutes. Separately, beat egg whites and add to the mess. Dip the vegetables separately and fry in oil bath.
