Rice with truffles

Ingredients
1 truffle - 120g
2 scallions
1 clove garlic
1 chicken broth
1 cup round pearl rice
3 cups hot water
pinch of pepper
feta cheese Parmesan optional
1/3 cup olive oil

Method
Put the truffle in cold water for 1 hour, then wash well the sand, sheet peel and cut into slices. In a small saucepan put the olive oil, chopped onion and garlic, chicken broth and chopped truffle fry lightly, add the washed rice and fry 1 minute more. And add water, stir and let simmer over low heat, stirring 1-2 times. When the water boil off, pull the pan from the heat sprinkle with a pinch of pepper. Serve on a plate and optional Grate a little parmesan cheese. * 1 cup = 240 ml
