Rolls of eggplant with tomatoes

Ingredients
3-4 eggplants (600 g)
2-3 tbsp flour
sunflower oil for frying
# For the filling:
3-4 tomatoes (400 g)
1 tbsp mustard
5 tbsp mayonnaise
4-5 cloves garlic
salt
parsley

Method
Eggplant cut transversely into thin strips. Salting and draining their bitter water, then rolled in flour and fry. Tomatoes are peeled, cleaned of seeds and cut into thin circles. Grind garlic and mixed with mustard and mayonnaise. Each strip eggplant smeared with filling and cover with pieces of tomato, add salt and scatter with chopped parsley. Wound on rolls. Serve with podlucheno yogurt and sprinkled with parsley.
