Omelette souffle

Ingredients
2 eggs
1 tbsp (10 g) powdered sugar
20 g butter
compote of your choice

Method
Is broken yolks with the sugar, add the beaten foam egg whites in strongly heated pan fry . Serve immediately with compote.
