Adjika with feferoni peppers

7.5 kg tomatoes
2 kg feferoni peppers
1 cup sunflower oil (200 ml)
1 cup wine vinegar
1 cup crystal sugar
1/2 cup salt
1 bunch parsley
4 cloves garlic
2 chillies

Grated tomatoes (I use rum) in large pieces grater (discard skin) and put them to boil in a deep pan (if you have a machine to grind tomatoes is more better that are seedless). Boil until evaporate some of the liquid. Starting to thicken stirring continuously. In the meantime prepare the marinade from the oil, vinegar, sugar and salt in a saucepan and put it on a separate stove. After boil marinades are placed in two handfuls of Chorbadzhiyski peppers, which are pre-washed (optional handles can be cut), and boiled long enough to change color. Subtract them in a separate container and continue so until all the peppers pass procedure. The remaining marinade to add compressed tomatoes and stirring constantly. Cut thin slices of garlic and add to the tomatoes. Once thickened (about 20 minutes), add the peppers and parsley and continue to confuse. Boil for about 15 minutes and remove from heat. Try to determine if any extra salt and sugar and add as needed. If Chorbadzhiyski peppers are spicy, you do not need to add hot peppers, but if not, then at putting Chorbadzhiyski peppers with tomatoes, add chopped hot peppers (you specify how spicy you want to become, the more chili peppers are the more bitter will Adjika). Ready mix spill in jars (I use 340 ml and 13 received) and sterilize for 15 minutes

does not say marina and marináta. Chorbadzhiyski peppers cut you or remain intact? I'm going to try with a small amount that I have conditions here cooking preserves in great style :)

Peppers to remain intact, so it is better to choose not very long. I became you wonder where is stocked with all of these products in your recipes. I just find peppers :(.

I buy from local producers - small and medium farmyards. By some eggs from other milk from third vegetables, meat from others ... For things that are more exotic or cereals looking to buy eco / bio-productions. But the Turkish / Arab / Indian shops buy, then do is that I do not care how supposedly clean food;) Your Adjika I liked really will try. I guess the sauce can also be cooked.
