Arabic buns for doner

Ingredients
5 cups flour type 500 (685 g flour type 500)
1 cube of fresh yeast or 2 packets of dry
1 tbsp sugar
2 tbsp olive oil
250 ml warm water

Method
Sift the flour and mix with dry yeast, sugar and salt ( if yeast is fresh is dissolved in hot water). Add olive oil and warm water and knead until elastic dough. The resulting dough is divided into 16 balls and leave to rise in floured table about 30 minutes. The oven should be heated to 250 C. When the buns rise are rolled with a diameter of 15-18 cm and 5-6 mm thickness. Bake in preheated oven for 8-10 minutes until the swell and become golden brown. Immediately after removing cover with a towel to become soft.

And what is the amount of salt that should be added? I try to do the recipe and I can not find it in the description. Thank you in advance.
