Ingredients
          2 cups flour
          1 and 1/2 cup sugar
          2 cup raisins
          2 cup walnuts (medium-sized pieces)
          3 large grated carrot
          rind of 1 lemon
          1/2 cup sunflower oil
          4 eggs
          2 tbsp baking soda
              Method
              Beat eggs with sugar, add the oil, flour and baking soda. Stir. The finished mixture add grated carrots and lemon peel. Add raisins and the walnuts. Stir well. A rich dough. Pour the mixture into a buttered and floured previously tray. Bake in a moderate oven until ready. The cake is served cold.
