Ingredients
500 g zucchini
2-3 green onions
3 tbsp sunflower oil
1 cube vegetable broth
2 slices of bread
100 g sour cream
black pepper, salt
Method
Scrape the courgettes and wash them. One zucchini Cut 4 slices, cut into sticks. Other mode on large cubes. Clean onion and chopped. In 2 tbsp sunflower oil fry the onion and zucchini, pour them with 4 cups hot water and when it boils put the crumbled stock cube. Cover the pan with a lid and let the soup to boil 10-15 minutes. In the remaining sunflower oil fry chopped into small cubes of bread. Puree the vegetables in the soup and add the cream. Put the remaining slices of zucchini and leave to boil for 2-3 minutes. Season with salt and pepper. Serve with bread cubes.
