Meat in a jar

Ingredients
veal
sunflower oil
salt
pepper
bay leaf
Method
Locals cut in large chunks. Fry in a preheated oil until it evaporates precipitated liquid and fat remains. Add salt to taste, optional seasoned and stuffed into dry jars. Capped and sterilized for about 4 hours.

I am afraid that if fried meat then sterilized 4:00 will become as bran, ie will be totally overcooked.
