Mussels with celery

Ingredients
2 kg mussels
1 stalk celery (leaves of Chapter 1)
2 apples
1 tbsp lemon juice
2 onions
6 lettuce leaves
1 bunch parsley
1 tsp mustard
1 egg yolk
250 ml sunflower oil
pepper, salt
Method
Mussels are cleaned with a brush and wash. Boiled, allowed to drain, and then the shells are separated. Leaves of celery are separated and stathe base finely. Chop washers, which are divided into rings. The apples are peeled and cleaned from the core and cut into small cubes, and then is poured and mixed with lemon juice to prevent darkening them. The yolk, the oil and mustard is prepared mayonnaise. Seasoned with salt and pepper. To this was added celery, clams and apple cubes. In salad bowl arrange lettuce leaves, so as to cover the walls. Pour the mixture into the bowl, as it is arranged on the onion rings. Sprinkle with finely chopped parsley and finely chopped celery leaves. Serve well chilled.
