Parfait with plums and rum

Ingredients
2 eggs
4 yolks
400 g cream
10 g vanilla sugar
250 g sugar
3 tbsp rum
250 g plums
20 g roasted almonds
1 lemon
Method
Plums cleaned from the stones and cut into four. Boil 3 tbsp water with 100 g of sugar and lemon juice. Plums are smothered in sugar syrup about 15 minutes on low heat. Remove from heat and add them rum. Leave to cool. Eggs, egg yolks, 150 g of sugar and vanilla sugar is broken wire in a water bath until thickened. Remove from heat, immerse in cold water and continue to beat until the cream completely cool. Add cream and shattered. Half of the mixture is poured into appropriate forms and put in the fridge's freezer. Remove after 30 minutes Arrange plums and pour the rest of the cream. Again put in the camera to be set. Before serving forms are dipped momentarily in hot water and turn on the plate. Top and side Parfait sprinkle with almonds and around pour rum syrup.
