Sponge cake with apples and pineapple

6 eggs
200 g sugar
200 g yogurt
160 g butter
160 g flour
120 g starch (in the original almond flour)
vanilla, almond extract
10 g baking powder
2 apples
1 pineapple
2 tbsp brown sugar

Peel and cut apples into cubes. Peel the pineapple and cut into thin slices. Beat the egg yolks with sugar. Beat the egg whites of hard snow with a little salt. Add yogurt and melted butter. Mix flour, baking powder and starch. Add a spoon to spoon the mixture, stirring constantly. Finally, add the beaten whites and diced apples. Flavored with 2-3 drops of almond essence. Stir gently with a spoon, not with a mixer. Pour into cake pan with dimensions of 26 cm, pre-greased with margarine. Place pineapple slices on top. Sprinkle with brown sugar. Put to bake at 160 C for 45 to 60 minutes. After removing from oven, let cool before sprinkle with powdered sugar or pieces griyyazh. You can serve it with whipped cream * Griyyazh is finely crushed caramelized nuts.

Marina you how we made with almond flour or starch? Interesting recipe and taste looks very tasty. Goes to favorites.

I did it again with starch and only corn. And your cake rose. I think the use of broken proteins finally scored enough air into the mixture and then lightens, becomes fluffy. This is a technique of making sponge cake that does not enjoy baking.

It is right to proteins, I smash them with half the sugar for kisses and finally add them with gentle stirring and never foul, no matter what starch, corn or wheat. Each cake prepare it this way.
