Steamed eggplant with onions

Ingredients
1 kg eggplants
2 onions
3-4 tomatoes
2 tbsp sunflower oil
salt
pepper
parsley
Method
Finely chopped onion stew with fat in a Teflon vessel. Add eggplants, peeled and diced. Finally, put the peeled and chopped tomatoes, salt and pepper to taste. Serve stew until vegetables soften. Serve sprinkled with chopped parsley.
