Veal in Turin

Ingredients
1 kg beef topside
2 carrots
1 onion
1 head celery
1 cube vegetable broth
1/4 tsp grated nutmeg
9 peppercorns
1 pinch salt
2 handfuls of walnuts nuts
2-3 tbsp cooking cream
Method
The meat is washed and placed in a saucepan. Pour water that does not cover the meat and put to boil. Once the water boil, foam from the broth is removed and the power of the stove is reduced. After about 40 minutes add the carrots, celery and onion and seasoned with vegetable broth, nutmeg, pepper and salt. Boiled meat to cool and cut into slices. Once the vegetables are cooked, are removed from the pan and place in a food processor with a little broth. Add the walnuts and cream and pureed. The meat is served sprinkled with cold vegetable sauce.
