Banitsi (pretzels) with minced meat and eggplant

6 filo pastry sheets
125 g minced meat
1 eggplant (about 250 g)
1 small egg
1 onion
50 g feta cheese
1/2 bunch parsley
1 tsp pepper puree (tomato)
6 tbsp sunflower oil

Eggplant baked (I wrapped tightly in aluminum foil and use the oven, as it baked with a pita). Once cool, peel and cut into small pieces. Chop in small pieces and stew in 2 tbsp sunflower oil. After softening his add minced meat. Stew continues until a crumbly mass. After cooling, there was added the crumbled feta cheese, white of an egg, chutney, eggplant and parsley. The resulting mass is mixed thoroughly. Add salt to taste. Each crust spreads in length and is smeared with sunflower oil. Folded in two - unite the two short sides (see photos). Top re-coated. Then cut into 4 equal strips parallel to the short side newly. At one end of each strip was placed in 1 tsp of filler, and then is folded so as to obtain a triangular shape. Often trouble when you need to evenly distribute such stuffing. Therefore, more easily divided mixture of two (just note above the handle of a fork or spoon). Each half divided into 4 and each quarter 3. As put 1 tsp of three strips can easily be adjusted. cooked pretzels (banitsi) is brushed with broken yolk. Bake in preheated moderate oven - 180C. * The products are 24 banitsi.

Ina became a big yummy! :) I did not make patties and imposed pie. I used lamb mince and unfortunately I forgot the cheese :( And many of us we like the combination of minced meat with eggplant, so there was no way to miss the recipe :)
