Chicken fillet with sauce Four Cheese a la Thoreau

Ingredients
400 g chicken fillet
1 onion
1 clove garlic
80 g blue cheese
80 g processed cheese
80 g cream cheese
50 g white feta cheese
200 ml cream
40 g butter
100 g of rice (arborio)
600 ml vegetable broth
200 ml white wine
oil
white pepper
salt

Method
In a pan with olive oil fry the onion and 2/3 garlic, add a little white wine, and then the cheese, cream and a little vegetable broth. The sauce is left to the fire to thicken. Chicken cut into strips, seasoned with salt and white pepper and fry in a pan with olive oil. When finished put a little white wine, and then the prepared sauce. Fry the remaining chopped onion in the butter, add rice and a pinch of salt.
