Christmas bean salad

4 handfuls of pinto beans
3-4 pickles
1 stalk leek
2 onions
1 chili pepper
2 cloves garlic
3-4 tbsp vinegar
1 tsp savory
1 tsp mint
1 tsp dried parsley
1 tsp salt
7-8 tbsp sunflower oil
3-4 tbsp chutney

Boil the beans, place in a salad and to it add chopped pickles wheels. Onions baked or broiled in the oven together with the peels. Then cleaned and cut into julienne. Cut the leek into small pieces and everything is added to the beans. In a bowl mix the vinegar, savory, parsley, salt and mint. Stay 10 minutes and add the oil, finely chopped garlic, crushed chili pepper and chutney. Mix. Salad flavor and allowed to stand for 1 hour in a cool before consumption.

Something similar will and our salad for today Andrew. Only addition I would put corn on the cob and will miss the chilli. Prepare it in a way each year and for Christmas Eve.

But I would like replaced with roasted chilli peppers

Wonderful salad. I also put and roasted red pepper.

making it similar way - put two kinds of beans - red and buttery. Instead chutney slice a few roasted peppers. Chilli miss it because of the child. Embellish with large black olives. Salad is delicious!
