Fish in Stara Zagora

Ingredients
800 g of hake beard or without head
1 cup (200 ml) vegetable oil
3 yolks
1 tbsp (10 g) mustard
50 g pickles
75 g yogurt
1/2 bunch parsley
1 lemon
salt
pepper
Method
Fish is cleaned of skin and bones, washed thoroughly and cut into portions. The pieces are salted, scatter with ground black pepper, rolled in flour and fry in highly preheated oil. Of vegetable oil and egg yolks make mayonnaise, which is mixed with chopped pickles and parsley, mustard and mix yogurt. Cold fried portions pour prepared sauce and decorate with lemon and parsley twigs.
