Juicy sponge cake from Limena and coconut

# For the cake:
250 g flour
170 g sugar
150 g yogurt
150 g melted and cooled butter
100 g grated coconut
3 eggs
2 tsp baking powder equal
finely grated rind of 1 lime
# For the syrup:
170 g sugar
100 ml lime juice (Limena, small green limoncheta)
50 ml water

Cake: In a bowl mix the flour with the baking powder. Add all products without coconut flour and mix until a homogeneous and smooth mixture. Add coconut and mix well. Pour dough into an oiled cakes shaped and smoothed. Bake in a preheated 180 C oven for 45 minutes. syrup: sugar, water and juice limetoviya heated. Stir until melted sugar. Allow to boil for about 2 minutes and was removed from heat. cake cool for about 10 minutes. The mold is shaken slightly to remove the cake from the walls of the mold. With a wooden skewer to make holes in several places and pour more hot syrup. After cooling, the cake is removed from the mold.

I loved the recipe, but here again the disadvantage of the small town. What to replace Limena? Our market has only ordinary lemons. Will wait for an answer.

Ive, try with lemons. Syrup I did it with brown sugar, peppermint flavoring and a little rum to get mojito cake:-). Syrup soaks into the cake and if was not moist:-) I suggest you do a double dose of syrup, but you judge.
