Penne but rate

Ingredients
250 g penne (or pasta)
1 eggplant
4 tomatoes
150 g mozzarella
50 g parmesan
basil
oregano
Method
In salted water is boiled pasta. Eggplant cut into small cubes and fry in sunflower oil, until golden in color, add chopped tomatoes, a pinch of oregano and a few fresh basil leaves, salt to taste. When the sauce is ready to paste it added (penne or macaroni), shredded mozzarella and Parmesan.
