Zander with green sauce

Ingredients
4 fillets of zander
5 tbsp lemon juice
salt
pepper
50 g shrimp
1 lettuce
1 bunch spring onions
200 ml broth (vegetable)
2 tbsp cream
Method
Fish fillets are cut to length so as to obtain a thick strip. Each piece is seasoned with salt, pepper and lemon juice and cover with a leaf of lettuce. At one end put shrimp and rolled up at the end is fixed with a toothpick. In a saucepan (in a pressure cooker it better) is heated butter, which are steamed chopped onion and lettuce. Pour in broth and bring to the boil placed fish rolls to boil 15 minutes. The fish is removed, leaving a warm and sauce pass a smooth mixture. Add cream and boil until the sauce thickens. During boiling put salt, pepper, lemon juice and lovage optional. The fish is served each roll is flooded with green sauce and served with steamed rice.
