Fritters with pumpkin (Filhos de abeansora)

Ingredients
1 kg of flour
500 g pumpkin
15 g yeast
the juice of two oranges
1 cup brandy
sunflower oil for frying
sugar for sprinkling
cinnamon for sprinkling
salt

Method
Pumpkin put to boil in boiling salted water until tender. The water is filtered. The yeast was dissolved in a little cold water. Flour is added to the pumpkin mixture and stir with your hands. Add yeast orange juice and brandy. Kneaded to obtain a homogeneous dough. Bowl of dough covered with a cloth and leave in a warm place to rise until doubled in volume. In a deep skillet heat the sunflower oil. With two tablespoons of dough is taken and placed in the heated sunflower oil. Fritters are fried until golden. Remove with a slotted spoon, rolled in a mixture of sugar and cinnamon and arrange in a serving plate.

1cup brandy what the role is not a lot of quantity? I know that alcohol prevents the dough to absorb excess oil.
