Balls of crawfish

Ingredients
250 g of lobster meat
1/4 cup (50 ml) vegetation butter
1/4 cup (50 g) flour
1/2 onion
1 and 1/4 cup (250 ml) milk
pepper
salt
nutmeg
50 g ham or mushrooms
2 eggs
breadcrumbs
vegetable oil
Method
Chop the onion finely and fry in heated vegetable oil. Add chopped ham, then the flour was carefully diluted with milk while stirring so as to obtain a smooth thick slurry. The meat of lobster is cut finely and pour in the sauce. Season with salt, nutmeg and pepper and stew on a very low heat. The cold mixture to form small balls, rolled in egg and breadcrumbs and fry in boiling oil until they are crispy and form a brown crust.
