Croquettes eggs and brain

Ingredients
400 g of cooked and peeled beef or pork marrow
6 eggs
Flour
breadcrumbs
30 g butter
grated cheese
parsley
pepper
grated nutmeg
grated lemon peel
salt
frying fat
Method
Brain is crushed with a fork and stirred with macerate butter, are then added one by one 4 eggs and some flour. The mixture is placed in a water bath and gently stirring, a pinch of salt, pepper, nutmeg and lemon peel. When the mixture begins to thicken, the court withdrew from the fire, but the agitation continues until its cooling. Pour into greased pan and leave to cool to harden, then formed into croquettes. Crockett is rolled in flour, dip in beaten eggs and remaining in breadcrumbs and fry until golden color in very hot fat. Sprinkle with grated cheese and chopped parsley and serve.
