Plucks Fried mushrooms

Ingredients
500 g plucks (kidney, liver, heart, sweetbreads)
150 g lamb brain
10 mushrooms
salt
pepper
parsley
60 g butter
vinegar
Method
Brain soak in acidified with vinegar water for 1-2 hours. Giblets are finely chopped and fry in heated butter, add the cleaned and sliced ​​mushrooms and peeled brain, cut into large cubes. Add salt mixture and fry for ten minutes, sprinkle with parsley and black pepper, is distributed into bowls and serve.
