Cracked bread

400 g white flour
50 g wholemeal
7 g dry yeast
2 tsp salt
1 tbsp olive oil
275 ml warm water
# For the crust:
25 g rice flour
1 tsp sugar
dry yeast
1 tsp sunflower oil
1 tbsp water
Put the two types of flour in a bowl. Add salt and mix. Add the yeast and make a hole in the mixture. Pour the water and the oil and mix. Once the dough is formed, remove it and knead on floured countertop for 5-10 minutes. The dough should be neither too hard nor sticky. Shape dough into a ball, put it in a bowl and cover with a piece of greased piece transparent foil. Let it rise for half an hour. For the crust, mix in a bowl products and mix them until smooth. Place the ball of dough into a flat pan and top coat it with toothpaste crust. Bake bread in a preheated oven at 200C degrees for 25 minutes.

How dry yeast for the crust?

One coffee spoon is enough, it only rice flour rather gives cracked appearance.
