Leeks with prunes and rice

Ingredients
250 g of prunes
4-5 leeks
2-3 onions
1/2 cup Rice
5 tbsp sunflower oil
1 tsp paprika
1 tsp tomato paste
1/2 bunch parsley (can and dry)
salt

Method
In the oil and a little water stew chopped onion. Add tomato puree mixed into a little water, red pepper, leeks, cut into strips and prunes, previously well washed and soaked in boiling water. Add salt to taste and pour 3 cups hot water (can be used and that in which they soak). Boil until soft of plums. Add the washed rice and simmer for 10-15 minutes. After taking off the dish from the fire, sprinkle with parsley. Serve cold.
