Almond parfait

Ingredients
3/4 ​​cup sugar
3/4 cup Water
8 yolks
1 cup thick cream
4 tbsp finely chopped and lightly toasted almonds
1 tsp almond extract
Method
Put the sugar with the water to boil for 5 minutes stirring constantly. Leave to cool and put back on the fire, but in a water bath. Beat the egg yolks to whiten by them add 2-3 tbsp syrup warmed syrup. Stir them well and then pour it in a thin stream, stirring constantly, to the syrup on the stove. When the mixture begins to thicken remove from the fire and without forsaking confusing mix it cooling. Whipped cream hardening. Add to egg mixture essence, cream and almonds. Pour the mixture into a suitable container and leave in the refrigerator. When tightening optional garnish and serve.
