Stewed beef fillet

Ingredients
600 g fillet
20 g salo
40 g butter
piece of carrot
celery
parsley
onion
300 g beef bones
2 tomatoes
1/2 cup (100 ml) white wine
100 g Madeira Wine Sauce
2 tbsp (20 g) potato flour
1 lemon
pepper
black pepper
bay leaf 1
2 cloves
salt
Method
Fuck meat shpikova with pieces salo, add salt, sprinkle pepper, fry in butter, add the chopped bones, cut pieces of onion , root vegetable, tomatoes, spices, lemon peel slice, pour water and white wine and stew until soft under a blanket. Choking meat watered with oil and hot water. Strain the broth, thickened with potato flour mixed into white wine and boil for quarter of an hour. Add Madeira and lemon juice.
