700 g veal leg
300 g streaky pork
100 g salo
2 slices of white bread without crust
100 g mushrooms
100 ml wine
1/2 tsp grated lemon peel
3 tbsp cream
3 eggs
parsley, salt, pepper, cumin, bread crumbs
# For the sauce:
150 ml red wine
1/2 tbsp tomato paste
2 tbsp cream
100 g smoked brisket
1 tbsp flour
1 tsp mustard
salt, caraway
70 g butter
The meat is ground with the bread machine with meat. Add mushrooms, finely chopped and stewed in wine, lemon rind. To cool mixture, cream, 2 whole eggs and 1 egg yolk, parsley, salt, pepper and kneaded well. Well blending mixture is formed into a long loaf, which is coated with egg white, sprinkle with breadcrumbs, shpikova is dense with julienne of salo and put in an oblong shape. Bake for 40 minutes.
