Tortilla with vegetables

Ingredients
800 g potatoes
400 g green asparagus (peppers or zucchini)
200 g green onions
3 tbsp olive oil
10 eggs
salt, cayenne pepper (cayenne pepper)
parsley

Method
Potatoes Peel, wash and cut into cubes with a size of about 1 cm. Be blanched in boiling water and drain. Asparagus (peppers) also cut and blanched for 2-3 minutes. Onions cleaned, washed and cut into pieces - 1 cm. The frying pan was heated and the oil therein fried onions, potatoes and peppers for 6-8 minutes, then add parsley and salt. Eggs are broken and season with salt and cayenne pepper. Heat the oven to 200 C. Tray (20-30 cm) is smeared with olive oil, pour 1/3 of the egg mixture, add the vegetable mixture and fill the rest with egg mixture. Bake for 20 minutes. Once cool, can be cut into cubes.
