Chicory salad and avocado

Ingredients
3 chicory (can mix red and green)
2 avocados (3 if less)
1 tbsp Dijon mustard
2 lemons
60 ml olive oil (extra virgin)
black pepper, salt
Method
Remove the outer leaves of chicory and cut 1.5-2 cm from the stem to remove the bitter part. Then cut chicory cross over 2 cm to obtain thick strips. More beautiful is obtained if you mix green and red chicory. Peel the avocado and remove the pit. Cut it into large cubes or crescents (pyramids) and add the chicory. To make the dressing mix mustard, lemon juice, olive oil, salt and pepper and mix well to obtain a homogeneous mixture. Pour salad dressing and serve obtained.

Mmmm, sounds very good, I love avocado in any combination! Simple and very elegant recipe.

You can try option that can add pieces of peeled orange skins and 1/2 grapefruit (also removed flakes) and a handful of coarsely chopped walnuts and a little Parmesan cheese cut into flakes. Then do not put mustard marinade and add the juice which is separated from the oranges and grapefruit. A very warm winter salad.
