Eggplant with mince and cheese

Ingredients
1 eggplant
1 onion
100 g minced meat
50 g cheese
spices of your choice
dill, garlic, parsley

Method
Eggplant is cut into two halves, salted and allowed to stand for 15 minutes. With a knife and spoon gouge halves. Shaped halves are put in lightly salted boiling water, good to soft. Hollowed part fry with onions and minced meat with spices, fennel, garlic, parsley. This mixture is filled eggplant and bake until ready. Finally add the cheese and bake again.

I do this. But they brew quite a bit, not very tender and without then bake. Sometimes put in a little grated tomato mincemeat.

Do it this way, but put a bed of peeled tomatoes on mince also to avoid burns.
