Knuckle with vegetables in aromatic sauce

Ingredients
1.5 kg beef shank (4 discs)
200 g of prunes
2 onions
4 cloves garlic
1 handful of raisins
4 carrots
2 eggplants
2 zucchini
2 red peppers
1 tsp ras el Hanoun and cinnamon
in 1/2 tsp ground coriander seeds, ginger, pepper
1 tbsp salt and red pepper (cayenne might)
3-4 capsules black cardamom
oil
200 ml wine optional
broth or water for cooking
2 pm. h. real couscous
sprinkling of fresh coriander

Method
The meat is cleaned from the perimeter and inner skins, separated from the bone and cut in large pieces. Onions and garlic finely. Peel the carrots and cut in the middle, and if they are thick, and halve lengthwise. Zucchini and eggplant also be cut in two in the middle, then each half of the zucchini was cut into a length of the long pieces 4 and 6, respectively, eggplant. Dried plums can be split. Wonderful recipe, great performance, couscous Do not boil or steam is enough to stay only 5 minutes in the water?

I use the only available here couscous, of Ferrero and he apparently semi and is prepared according to the package right. I guess you have access to raw couscous, and naturally have to prepare well prepared there - in kuskusiera or other tool for this purpose :)
