Ingredients

175 g flour
125 g soft butter
1 tbsp baking powder, vanilla 2
3 egg yolks +3
150 g sugar
100 ml water
60 g sugar
80 ml strong coffee
250 ml pastry cream
230 g feta cheese Mascarpone
50 g of powdered sugar
1 tbsp cocoa

Method
Heat milk with vanilla to the boil. Remove from heat and add the butter. In separate bowl sift flour with baking powder and a pinch of salt. In a glass bowl on a water and egg yolks with 150 g of sugar. Beat with a mixer until the sugar has melted and the mixture doubles in size as careful not pregreem mixture (as topnem finger gently money). Add flour spoon by spoon and little by little milk already melted butter. Stir gently with a spoon. Pour the mixture into cups for muffins to 2/3 of their volume. Bake in preheated 160 C oven for 20 minutes. Prepare syrup 100 ml water and 60 g of sugar to a boil and then is added the thick coffee and stir. Prepare and mascarpone cream as with powdered sugar Beat well and add good shattered cream, stirred the two mixtures with a spatula. Once the cupcakes have cooled down Prick with a stick and syrup very well. Decorate with cream and sprinkled with cocoa.
