Salad with roasted eggplant, peppers and tomatoes

Ingredients
1 eggplant
5-6 tomatoes
5-6 green and red peppers
1 onion
1-2 cucumbers
sunflower oil
vinegar
salt
parsley

Method
Eggplant bake in the oven, not stripped or broiled. After being cooled is peeled and cut into pieces. Was added thereto, peeled and coarsely chopped peeled tomatoes and roasted striped peppers, cucumber, onion, vinegar, salt and parsley. All this is well stirred and served with grated feta cheese.
