Ingredients
          6-8 cloves garlic
          2 cup mashed potatoes or 2 cups soaked bread well squeezed
          1/2 cup olive oil
          1/4 cup vinegar
          salt

          Method
              Crushed garlic with the salt slurry add to mashed potatoes, stirring, gradually add the oil and vinegar drop by drop, stirring with a wooden spoon or mixer until a creamy. Similarly was prepared and soaked bread. Serve with fried fish or fried eggplant and zucchini.

I love Skordalya! Home build it up with an old brown bread. Is superb and spreads on toast (even if it sounds strange to anoint thee bread on bread). We do not drink alcohol houses, but friends have made it as an appetizer to munch rakia.
