Sour Cabeza

Ingredients
500 g pig's head or pork ribs
750 g sauerkraut
1 apple
1 onion
3-5 juniper berries
cumin
1/3 cup (70 ml) white wine
20 g butter
2 tbsp (20 g) flour
500 ml broth
2-3 tbsp grated horseradish
2-3 tbsp cream
Method
Salt pork with a little cold water is boiled, but not completely. Add sauerkraut with peeled clearance apple seed, the fruits juniper and onions and stew until tender (the broth should almost turn aside). Make wine. For horseradish sauce is prepared light roux of flour and fat, make broth (or water), mix grated horseradish and season with salt and cream to Serve cooked unpeeled potatoes.
