Mishmash under cover

Ingredients
1 tomato
3 peppers (roasted)
2 cloves garlic
100 g feta cheese (cow)
1 onion
1 carrot
3 eggs
2 tbsp sauce uni
3-4 tbsp sunflower oil
100 ml beer

Method
Carrots and onions grate a medium grater. Peel tomatoes and cut into cubes. In a pan heat up, 3-4 tbsp sunflower oil. Carrots and onions are put in the pan and fry. Add beer and allow it to boil off. Add diced tomato, garlic cloves (not peeled). Add uni sauce and then it cut peppers into strips. Fry some more, and tap low 3 eggs. The entire plate was covered with a lid and waiting so 8 minutes. Then sprinkle with coarsely grated feta cheese, and was capped again. After 5 minutes, remove the lid, sprinkle with parsley and serve.

Having put cheese fry / cook another 15 minutes? What happens to the egg during this time? It meanwhile boil more than 20 minutes, right? Do not become stringy protein and trichav yolk?
