Strudel with quince and apples

# sheet:
500 g flour
250 g butter
3 yolks
5 tbsp cold water
1 tsp mahlep
1 and 1/2 tsp salt
# For the filling:
1 kg quinces
700 g apples
200 g sugar
125 g butter
200 g walnuts
120 g of powdered sugar plus 50 g of powdered sugar for sprinkling
2 tbsp breadcrumbs
salt, citric and orange peel
1 cinnamon stick

It looks great, but I did not understand *and fold into three* - how to fold the dough, if you upload a sketch or photograph of folding.

I've done and all strudel. The normal length of 40 cm was strudel to be able to fit into a standard baking pan of a standard oven.
