Eggplant rolls with cheese

Ingredients
1 small eggplant
1 tomato
fresh thyme
oil
# For the filling:
50 g feta cheese
50 g cheese
50 g blue cheese
50 g smoked feta cheese
1 egg
1 tbsp sour cream
1 tbsp breadcrumbs

Method
Eggplant cut lengthwise into thin strips (maybe not white). Add salt to the bread and then left for 10 minutes. Rinse with water and dry with a kitchen towel. Grate cheese grater in large pieces and mixed with other products for the stuffing. Put it in a spoonful of filling at the end of each strip eggplant and turns to roll. Finished rolls are placed in a greased baking dish with a little olive oil. Sprinkle with fresh thyme leaves. Tomatoes cut into thin slices maximum. On each roll is placed on a slice of tomato. Watered with a little olive oil and baked eggplants for 20 minutes at 200 C. Before served sprinkle the dish with thyme. * Eggplant rolls can be made with a variety of fillings: chicken, vegetables, minced meat, mushrooms or other of your choice. Spices change to filling - dill, basil, rosemary or oregano.

Today arms prepared eggplant but cut them in half and carved pieces as boats and filling were delicious.

Today I made them with minor changes (no blue cheese and smoked and put melted, rising and cheese). I wonder if it would be fair to give an assessment then *offense*. But they were still delicious. I am sure that the *original* will be even more delicious.

Indeed, the next day cold from the refrigerator, the last roll was magnificent.

Again their time comes to these delicious rolls. This time narasih top with breadcrumbs and Parmesan. Became a delicious crispy crust.
