Ingredients
2 tbsp olive oil
1 onion
50 g dried tomatoes
200 g mushrooms
1 tsp thyme
2 and 1/2 cup chicken broth
hot sauce or cayenne pepper
1 and 1/2 cup couscous
parsley (optional)
pepper, salt

Method
Olive oil is heated in a large skillet over medium-high heat. Add finely chopped onions and tomatoes and stir until onion is tender (2-3 minutes). Add chopped mushrooms and thyme and stir until the mushrooms release their water and soften (about 5 minutes). Add broth and hot sauce or red pepper and bring to the boil. Remove from heat, add couscous-Kusa and mix. Cover with a lid and leave for about 5 minutes until the couscous-Kusa absorb liquid. Stir with a fork and seasoned with parsley, salt and pepper.
