Eggplant salad with garlic

Ingredients
4 eggplants
2 cloves garlic
2 tbsp (20 ml) olive oil
juice of 1/2 lemon
2-3 sprigs of parsley
pepper
salt
Method
Eggplants are flooded with boiling water so as to be immersed and boiled until soft (approximately 15 minutes). Peel and crush in a mortar with the garlic, salt and pepper. Was added dropwise, olive oil, then the lemon juice and parsley.

And you may add mayonnaise, but no lemon.

if you want to bake the eggplant on the grill or oven. Then make an incision with a knife and cut the eggplant inside. Then put the above mentioned products and I add parsley.
