Ingredients
1 and 1/4 cup (250 g) flour
160 g lard
2 eggs
salt
1 yolk
3 veal kidneys
500 g veal
2 onions
1 carrot
salt
pepper
Method
Veal and well soaked kidneys cut cubes, rolled in flour and fry in 100 g of the lard with onions and carrots, cut into circles. Season with salt and pepper and left to stew. If necessary, make up a little water or meat broth. Of the remaining products (without yolk) was prepared shortbread and allowed to mature in a cool at least 30 minutes. Suitable oiled form cover with 2/3 of the dough, pour the finished slightly chilled meat on it and forming a lid of dough. Smeared with egg yolk and bake in preheated oven 20-30 minutes.
